Frozen mixtures of milk and rice are known to have been made in China around 200 BC. The Roman Emperor Nero had ice brought from the mountains to combine with fruit toppings to make chilled delicacies while the Italian duchess Catherine de’ Medici is said to have brought with her to France Italian chefs who had recipes for flavoured ices and sorbets. Variations of those recipes spread throughout the Royal courts of Europe until the first references to ice cream began to appear in Great Britain around 1744. It is from these extraordinary origins that the ice cream with which we are now familiar has evolved, and yet a sense of self-indulgence and occasion still remains despite increases in availability and popularity.
My family memories were nurtured by my grandmother’s sincere conviction in the goodness of ice cream. When we would visit our indulgence in ice cream after a family dinner was always approved of on the grounds that just enough would soothe the stomach and a little more would ‘help everything go down!’
